
Like our Chardonnay, we did our research and found the best microclimates that Paso Robles has to offer for growing premium Sauvignon Blanc. Hand harvested from select Paso Robles vineyards, the grapes for this wine are perfectly balanced to capture the bright acidity of the varietal.
Once again, we used a gentle pressing method to avoid extracting any bitter phenolics from the grapes. The Sauvignon Blanc juice was fermented in stainless steel fermentation tanks at very low temperatures to capture the fruity, herbaceous aromatics.
Super crisp and clean with bright fruity aromas was our objective and I believe we hit the target. Our homework has paid off!
