We wanted to create a medium bodied, everyday red wine that would be food friendly and guilt free. Thus we have our Tombstone Red. All the fruit for this blend is from select Paso Robles premium vineyards. The Blend consists of Cabernet Sauvignon and Syrah in fairly equal portions. We then added a heathy amount of Petite Sirah.

Each lot of grapes was vinted seperately to maximize the specific attributes of each variety. All lots started with ripe, hand-picked grapes that were gently crushed and destemmed to small half-ton fermentation bins. For the Syrah and Petite Sirah, we attempted to retain 15% whole berries to achieve more fruit forward characteristics.

Each lot was hand punched several times per day to gently extract subtle tannins and color. We then pressed the Petite Sirah off the skins early to avoid harsh tannins that can develop in that particular variety. The Cabernet and Syrah were pressed off dry. The wine was then aged in neutral French and American Oak barrels for up to 15 months until it was bottled in early Spring 2007.
