
The essence of Paso Robles Syrah on the pink side! Like our Estate Syrah, the grapes for this wonderful rosé were hand harvested, though slightly earlier than those for the Estate Syrah.
The grapes were then gently de-stemmed and lightly crushed to a stainless steel fermentation tank to be left "on skins" for 12 hours. This time on skins helped us achieve the beautiful, vibrant color and pick up some light, delicate tannins.
The must was then gently pressed to an icy stainless steel fermentation tank where it was fermented at 48 degrees for approximately 21 days. This long, cold fermentation helps capture the wine’s delicate aromatics.
After fermentation, the wine was racked to neutral French oak barrels to soften the its silky mouth feel. Just awesome! So refreshing it could revive the dead!
